    Pasta salad with fresh tomatoes, cucumber, green onions, spinach, a few chopped calamata olives, homemade vinaigrette and topped with crumbled feta. Great by itself or as a side dish. Very refreshing and yes, I do hide the leftovers in the fridge for my lunch the next day.

    Banana Cream Pie Trifle: layer baked pie crust bits, banana cream pie pudding, sliced bananas, and cool whip in a trifle dish. I ‘mustache’ this package!

    For some strange reason, my summer go-to favorite is tuna salad in croissant sandwiches; plain tuna mixed in with macaroni and cheese, and my all time favorite is tuna salad sandwich broiled with a slice of tomato on top… yummm.

    I can’t say I have a go to recipe for summer, but a treat that is my go to year round is Apple Streusel Muffins, they are so very good and never stay around long when they’re made!
